Earth to Table: Winged Bean

The breakfast at Norden Ruder uses crops grown by local farmers. Along with the rice and salty congee, the guests get to enjoy a variety of seasonal fruits and vegetables. Recently the fruits on the table are pineapples and lady finger bananas. You may also find a weird-looking vegetable, that is, Winged Bean.

Winged Bean looks a bit like fern and starfruits. It is also known as Four-angled Bean and Starfruit Bean. The Amis tribe calls it “fadas.” It is easy to spot the bean in the aboriginal tribes throughout the East Coast of Taiwan. The vegetable is easy to grow with little need for pest control. Its taste is fresh and crispy.
